My Mediterranean life began with my marriage to Rifaat Dagher in July of 1968. We toured Lebanon from North to South East to West. It’s not difficult to cover all the borders and the valleys to mountain tops. Lebanon is about as big as Rhode Island plus Connecticut. We awoke to the sounds of a village donkey, marveled at the ancient ruins of Baalbek and Anjar. We swam in the turquoise waters of the sea, or in beautiful seaside resorts replete with swimming pools and cabanas. The snow capped peaks of Mount Sannine, visible from Beirut, surprised me, it was, after all, July. But all the while I got to fall in love with the entire family, and the country. And, too, I enjoyed the marvelous cuisine and the versatility of all the cooks in the family who shared their recipes with me.
